Tamales, Deconstructed
AKA broken ankle cooking. Having just moved West, I was struck with a tremendous craving for tamales. And being vegetarian, my options to purchase ready-made tamales are pretty limited. And even the "easy" homemade recipes called for a lot more standing and stirring than I can do in my current state. Delicious alternative: peel, cube, and roast a small butternut squash. Fry slices of premade polenta, and top with squash, crumbled goat cheese, and Sriracha. If you're ambitious, heat some canned beans and add those as well. Top with thinly sliced green onion if you want to be extra-fancy. Voila. Not authentic in the slightest but easy and delicious.
